if you have EU passports no problem but if you have UK passport and residency then you are not going to be able to come in Dec to live permanently only for 90 days.  You must do all the paperwork first to apply for a Visa starting with the Spanish consulate in the UK.  Dario has written at length about the ways to apply to come check out his posts for more info or Google it for Government advice.  Post Brexit it is a red tape nightmare.

Thanks should have explained a bit more my wife has an EU passport and I have a British passport so I would be considered a dependent and not need to visit Embassy in UK

Do you think arriving in December is a bad idea

If you are unsure when you get here, call in to see Rianne the lawyer in Oria village, she is not expensive and has helped a lot of people.  December should be fine to travel over, warm days but cold nights, but better than the UK.  January and February both OK to travel but I would not travel March or April as the weather can be very changeable.   Double check about you having a UK passport just incase you do require the visa from the uk.

Hello just to say, I am in the process of applying for residency based on being the spouse of an EU citizen. You can do it when living in Spain. My husband is Austrian and has his residency in Spain. There are things you need to back up your application, to prove your marriage, you will need heath cover, proof you can support yourself, completion of form EX 19. Any English documents will need to be translated into Spanish by a certified translator. There is a lot of of information available on line. I am not an expert, the above is information I have found myself. Hope this helps.  Good luck. 😊

You'll get different information because it varies from one area to another. Basically though you will need your Padron certificate, passport, proof of income and proof of health cover ( either private insurance if not retired or S1 if retired). If you're married  then marriage certificate too. Docs  will need official translations.  It isn't complicated for an EU citizen and even easier if you use a gestor.
