First decision is how to cross the channel, we always used Eurotunnel as very easy (but we had dogs and they stay with you and only 35 minute crossing). Dover - Calais feries take about 90 minutes and services have been reduced due to Covid.
Portsmouth - Santander with Brittany Ferries also an option but services have been slashed due to Covid so may have issues in trying to book. It is also around 24 hours and the Bay of Biscay can get rough especially in Autumn / Winter.

They give good routes and minimise the tolls.
Make sure you have the necessary kit in your car (spare bulbs, hi-viz for all occupants, warning triangles (2 needed for Spain, etc)
We used Booking.com to find hotels en route and treated the journey through France as part of the adventure
We also tried to use supermarkets in France for fuel as the motorway stations are expensive. Fuel in Spain is cheaper and tends to be similarly priced on the Autovias although you can save by looking for off Autovia stations. Tolls are being removed from some Spanish autovias but website above should be up to date.
All of the tolls on the motorways take cards but the machines are all on the passenger side so ideally have one of your passengers on that side otherwise you will need to get out to operate them.
