Just an update…. After enquiring at Huercal-Overa Hospital, I have been told it’s not possible to have the U.K. one put on my Spanish Certificate so I will have to provide both separately for travel.

That's rubbish what they are telling you. I have had my uk and Spanish vaccinations put on my records and even got them to print it off

Thanks for the response Gary but I was asking how you got the U.K. one added to your records. Did you just go to your local Health Centre?

When she had second jab here we showed nurse her vaccination card from UK and they then added the details on their laptop. When we went to medical centre this morning they printed off certificate with both jabs on there.
