Hi.
As you live in Belfast, NI I presume you only have a UK passport. As like rest of the UK this means you no longer have the privileges of being in the EU.
This sadly means you have very low chances of getting a work Visa as a swimming instructor. It also sounds unlikely that you are considering applying for a non-working Visa (Golden). The new Digital Nomad Visa is good but it requires you to be an IT nomad or remote worker who can work over the Internet, as a consultant for example.
If you have extra skills that may qualify for that, it could be worth exploring but it has a very comprehensive application procedure.
Sadly Brexit killed off previously fluid movement in EU for work.
I wish I could share more optimistic news. That said, I'm not an expert but having been through the process since Brexit my advice is based on personal experience.

Being from Northern Ireland, where Belfast is, does not automatiaclly give someone the rights to a Republic Of Ireland (Southern Ireland) passport. SO they are not memebrs of the EU jsut like England Scotland and Wales.
Unless one has Southern Irish parents or grandparents then you can apply for one.
So BCSURFER is correct it's the Brexit catch

Yep, but OP didn’t disagree when I suggested “Irish Passport” so I didn’t feel the need to qualify further.
A couple of points to correct BCSURFER though - a Golden Visa is not the same as the normal Non-lucrative visa that people come over on (and looks shortly to be discontinued, like Portugal and Ireland)
A work permit can also be obtained if you apply as Autónomo - self employed. Also you *can* come over on an NLV and at the one year renewal point, apply to convert to a Work Permit
