Is your Lawyer a migration specialist?  It might not harm to get an opinion from someone like Mundi Abogados who deal with Extranjeria daily and know all the ins / outs - and quite probably have contacts they can reach out to to find out exactly what’s going on

What I don't see anywhere is proof of private health insurance. That also is mandatory.

Yes - under WA rules, either acceptance by Spanish health system or proof of private health was obligatory 

EDIT: (following queries re: S1 form)  acceptance by Spanish Health System can be accomplished with an S1 form.  This meets the obligation of proof of health cover

I thought the S1 was all you needed     Happy New Year Dario.  Hope it’s the best yet

I was informed by our lawyer that the S1 covered that. We have an appointment with her this afternoon so I will bring this up at the meeting.

I have just come across a payment to the Hotel Catalonia in Valencia on the 6th December proving that we were in Valencia travelling to Almeria. But if that would be considered official or not I have no idea.

I found this on the UK Government website which I think means that private health insurance is not obligatory.

When you get your S1 form, you must register it with the INSS.This will mean you and your dependants will be entitled to state healthcare on the same basis as a Spanish citizen.

They are correct - your S1 (prior to 31/12/20) was transferable Pension and Health Cover - so your S1 gets you into Spanish health system and meets obligation of having some form of health cover.
