Does anyone have experience of solar panel water heaters, the sort that have a cylinder on top? Are they cheap to buy and easy to fit?Finally :-) would one be economically viable for a holiday home used only as much as the 90 day rule will allow?

I doubt it would be economically viable unless they have drastically come down in price. I have one and I estimated it paid for itself in 12 years of full-time occupation. And it packed up after 15 years.
Maybe other people have had better experiences.
