If you are travelling from Portsmouth or Plymouth with Brittany Ferries to Spain you will have no problems. 

Bilbao or Santander just follow the information you shall receive on or before your ferry crossing.

Unfortunately I don't know how you will go on yourself with the border crossing between France and Spain - sorry! It's a new rule and there must be loads of people in the same boat, so I imagine they will sort it out by the time you travel.

Hi mate we drove to arboleas 3 weeks ago had to jump through hoops for spain and France  to travel . Got to euro tunnel went through customs got on n off the train and never showed our documents again . Only the stop over hotels asked to see our passports n they only glanced  just make sure you have in the car ins mot log book euro recovery and a roadside emergency kit .. 

Stick to the speed limits n you will be fine
