What are the consequences of exceeding the 90 day period of travel from the uk?
1. Possible fine on 1st "offence"
2. Possible fine per day thereafter
3. Possible prevention of re-entry in the future
4. Possible detention at airport/ferry-port/border-crossing - causing delay at best + fine(s) + possible court appearance

Definite stamp in passport indicating unlawful overstay that could cause problems re-entering Schengen zone in the future

I note that all the comments say ‘ possible ‘ , I have yet to actually find anyone who has or knows of this actually happening . Ps This is Spain , they have always had a 90 day policy , when you were supposed to report to a police station !!
The Original Poster asked a question. Merely, it was answered. Anything else is outside of our control.

Different now. Pre-Brexit, as EU Citizens, an overstay / disregard of registering if staying more than 90 days was an administrative offence only, with a fine that COULD be levied but rarely if ever was.
Now that UK is a Third Country Nation and subject to the Schengen Zone limits on permitted stay (90 / 180), an overstay of more than a couple of days guarantees at least a fine and an overstay stamp in the passport. Once you hit a week, the fine will grow exponentially and then your starting to look at deportation and anywhere from between a 2 to 5 year ban on returning to ANY of the 26 countries in the Schengen Zone.
Don’t be fooled into thinking “they need us more than we need them” and that because you spend tourist ££ an overstay will be overlooked. It won’t and apart from a fine, an overstay risks a very very real chance of being either banned from returning for a period, or refused entry on next return because of the stamp in the passport.

Just to back that up, On 24 May the Spanish government posted a notice saying any U.K. citizens living here that are not ‘90 day’ visitors and are not registered as residents or not in an application appeal, had 15 days to leave the country.
(Second last paragraph) : If the foreign citizen lacks any other type of residence and is in Spanish territory, he / she must abandon it within a maximum period of 15 days from the present notification (i.e. date of this letter) in accordance with art. 24 of RD 557/2011 of April 20)
I'd say that's a clear enough warning ....

Ummmmm …. I guess you didn’t read the letter. That IS the notice of implementation.
I reckon the matter can be resolved amicably with Spanish and UK politicians just gathering around a table and working out a simple solution. But, this won't happen by accident; people need to start canvassing their elected representatives both in Spain and the UK.
