I would recommend Lobster mobile. Good value and excellent coverage. 

I would also recommend Lobster. In UK at the moment, very easy changeover to O2 roaming.

Lobster does time-limited deals. So, if you buy say 20GB, what you haven’t used expires after that month. Not very expensive so it may not be an issue

I bought a Hits sim from the shop at the back of Koi (data only for a 4g router) which doesn’t expire (it might after a year) - runs out when one has used all the data which one can top up online. Seems reasonably cheap (not as cheap as data in the uk). 

I still get unlimited data on my phone and generous data for the hotspot but that means I have to leave my iPhone in the house for others to use so it wasn’t the solution for us
