We are in the process of buying a property (not a business) and next month it will be a year so my advice is:
Expect the unexpected (often paperwork is not in order when properties are listed for sale even when you are told that the seller is in a position to sell and go quickly by estate agents).
Never expect deadlines for completion of a property purchase to be met... everything goes at a snail pace!
Make sure you have enough capital to live on so you do not have the pressure of needing to open your business and earn by a specific date otherwise I suspect it will cause you horrendous frustration and stress.
As our Spanish solicitor said to us (which is good to heed) "If you want dead certainties when purchasing... don't buy in Spain!"
Seron is a very nice town have you been over and spent some time there? I have a villa for rent in Seron and maybe good to come and check it out
