Hello, I have to say first that I do agree with the other posters, that unfortunately I think you will find your plans are not viable with the changes due to Brexit.
However, I wonder whether you would be better served in terms of insurance, if that is what you wish to do, by applying for private health insurance in spain? I do not know whether that would be valid if you are not resident, that would be a question to ask the insurer. If you have a Spanish bank account you could ask them whether they have an insurance plan, I know many of them do.
I’m sorry that it seems Brexit is going to change your future plans, it is a shame for so many people who are accustomed to using their freedom of movement to winter overseas. I would suggest you have a good look at the gov.uk website in order to understand your position post Brexit.
