Rent a place for, say 3 months, in a central part of Roquetas. Many places have off season rates, some as low as €450 month including electricity and utilities. Any of the estate agents will be only too happy to show you around. Go online to get a good idea of what is available.

It's worth mentioning that if you need get back to Ireland, there are very few direct flights from Almería, your nearest airport - you'll need to get to Alicante or Malaga. Malaga airport is further away but is more easily accessible from Roquetas by cheap public transport.
If you're coming over by car this time of the year, there will be snow in the Pyrenées. This applies whether you travel via France or take the direct ferry from Rosslare to Bilbao.
If you secure your property you should not have issues with squatters in Roquetas. However, be aware there is a very large immigrant population in the western outskirts of town, especially in low paid industries such as fruit-growing.
However, all house insurance policies cover damage and losses due to breaking in and theft of your stuff, once there is evidence of forced entry.
