I bought my cortijo, off-grid, about 3 years ago. There was an existing solar panel / inverter / battery system in place, but not very substantial so there was a lot of use of the generator. I have upgraded to 18 panels (4.5kw) feeding a 12 battery (24v) system, and this provides absolutely plenty to run all of our electrics. When it's sunny, we have unlimited free electricity, and the generator only kicks in (programmed to do so to ensure the batteries are worked within the limits) during long spells of bad weather. I check regularly to see whether the generator has run, and if necessary fire it up occasionally to make sure it still works :)
If you want to maximise you use of free solar, and minimise generator time, it does require you to be a little thoughtful about when you run certain appliances. We tend to run the washing machine around mid morning and the dishwasher after lunch. However, once the basics are covered, I have free electricity to spare so can just run the pool filter pump all day free of charge. I'm very happy to be off grid, and we don't have the reliability problems that some of our neighbours tell us about with their mains electricity.
