Are there any English speaking Air Con installers willing to quote for one or possibly two units in a first floor apartment in Roquetas de Mar, Calle de Norte?

Try Leroy Merlin or Carrefour. They have several very good contractors.  

Make sure you have the cubic size of the room and add 25% to allow for doors, windows etc.  

From time to time Leroy Merlin produce an aircon guide (in Spanish).  It's easy to follow - with a little help from Google translate, if you're not confident with your Spanish. 

Be willing to pay a few extra euros for a quiet unit. Not nice trying to watch the tv with a noisy aircon hissing and whirring. 

If your place is not well insulated, you should get an "inverter" unit which will provide heat for the winter as well as cold air in the summer.  

Ensure your electricity supply will manage  - many Spanish properties have a max as low as 2.5kw, so you mightn't be able boil a kettle, run the washing machine and use the aircon at the same time.  You'll need get a competent electrician to upgrade your system if this is necessary - or learn not to use too many appliances at the same time!

Thank you for that.I will contact them. I was not aware that the incoming supply might be that low. I must check that out (it is am apartment that we hope to finalise the purchase on in the next few days)
