First Time in Roquetas de Mar

My wife and I are a couple in our late fifties and planning on coming to Roquetas de Mar for the first time next June. We will most likely be staying at the Playacapricho Hotel for two weeks early to mid-June. I am just trying to get some information about the resort and things to do etc.
We like to go out for meals and a couple of drinks on an evening and Roquetas looks to have a relaxed family friendly feel to it rather than a resort/touristy feel to it, is this the case?
We like to mix our holiday between beach days and trips but as we don’t drive we will be relying on public transport and excursions. I know that there is a bus service to Almeria, but can you go further afield from Roquetas and/or Almeria?
Can you get to Tabernas by public transport or is it better to take an excursion? I have found a website for Pepe tours; does anyone know any other tour companies? I would like to visit Mojacar, Cabo de Gata and Sierra Nevada but don’t know if I will get to them all.
I also know there is a train station at Almeria but can’t find any definite information on what places you can get to by train, can anyone help with this please?
Finally (for now at least) can anyone recommend any bike hire companies; cycling along the promenade looks like a good way to spend a day.
This is my first post and I accept some of my request may be a bit vague but I appreciate any help or advice people are willing to give.
