We always use Eurotunnel as it is quick and stress free for the dog as it stays with you in the car.
We make 3 overnight stops (but have done the journey with 2 stops).
We have used https://www.booking.com to find pet friendly accommodation and usually stop near Rouen and Bordeaux in France, then near Tuerel in Spain. Another option is to use https://en.gites-de-france.com/list.html for B&B's in France and https://www.zonasrurales.com/ for similar in Spain.

As they offer routes than minimise tolls and also explain the requirements for travel in both countries.
The French autoroutes have frequent "Aires" which have toilets and picnic areas and space to exercise your dog. Tryt to avoid filling up with fuel on the French autotroutes as they are more pricy, most french towns and cities have supermarkets with fuel facilities that are much cheaper. Fuel in Spain is generally cheaper than France and the UK.
