I live and work in Vera - we have at least one fishmonger here and he’s usually quite busy; in Vera though you’d need to speak Spanish as not many people speak English - it’s a very “Spanish” town.
Garrucha is the main fishing port, about 7 km from Vera and whilst I don’t know the town that well, I know there are a great many restaurants specializing in fish dishes - you MAY have greater success in Garrucha, but again there you would definitely need to speak Spanish.
Coming into a smaller town anywhere in Southern Spain without at least conversational Spanish and in a highly specialized and skilled trade is always going to be a difficult task. Jobs in Spain often go to family and close friends of family first, and even getting a foot in the door by waitressing at a restaurant somewhere is becoming increasingly difficult with now a great many experienced wait and bar staff laid off from restaurants closing due to coronavirus looking for work.
It’s not impossible that you’ll find a job in your skill, but without conversational Spanish, you certainly won’t in Vera and it’s highly unlikely in Garrucha ..... but Garrucha would certainly be your best bet.
My other advice is to move before 31/12, whilst the “old” Residencia rules apply. After 1/1/21 you will find it next to impossible to get a visa to live and work here unless you have a very great deal of money in the bank.
