Hi not sure I can help but the (fat suet) is wrapped around the beasts kidneys , this also applies to sheep and pigs alike. So you will appreciate there’s nit a lot from one whole beast ( cow bull) you can use the fat around a sheep’s kidneys but not from a pig, as it’s thin and basically useless . In England you would chill this fat to make it brittle so you can put it through a very fine mincer blade, you can add quality beef fat to this mix when mincing it . To keep it loose , you will have to add flower to prevent it from sticking together in lumps . Atora is the choice of make in England or a local butcher would be my preferred choice . Theres some quality private butcher shops in Spain who may be able to help . Garrucha has very good butchers . Good luck
