The nearest one that I know of is the Supremo in El Alquian about 3 minutes from the terminal. See Google Maps here. I don't know if they're open on 2nd May but you could perhaps send them a message via their Facebook page here. Going in the other direction but a couple of kms further away is a Mercadona as you enter La Cañada. See Google Maps here.

We went to Carrefour in Almeria yesterday and I took a photo of their holiday dates for 2017 - these do not include 2 May, but you could check website to be sure  it is huge and will have everything you want /need, plus they have coffee etc and cheap sandwiches if you need a snack  we find it is worth going a couple of miles from the airport to do one single shop for the time we are here.

The other supermarket which we go to from the airport is el Campo - in the Centro Mediterraneo - it is not as big as Carrefour but also has other shops eg H&M and places where you can get a reasonably priced lunch (12€?)  however, the shopping centre may well be closed on 2 May so you would need to check - or maybe someone else o  the forum might know.  I took the photo as last year we were caught out and went to a locked up supermarket!!!

Carrefour is easier to find as you take the road from the airport towards Almeria  - the final roundabout has a macDonalds and then you will see signs to Carrefour.
