Any advice on best safe reliable company to rent through? So far I've looked on VRBO (high service charges) and looked on Air BnB

Not at all. 

1. There are 14kms of wide beaches.

2. Seven Blue Flag sand beaches.

3. Not everyone goes to the beach. 

4. I’ve never seen packed beaches here, there’s always space on the beach and to swim.

5. Many return home for siesta at 2pm.

It’s true that the population expands massively here in the summer - bit like Blackpool? - as this is a Spanish beach resort. Very few Brits here.

Definitely used Tripadvisor for one. Airbnb is another obviously. This Holiday Lettings one - but it’s now part of TA.

Is it really ugly and high rise like Benedorm wouldn't like it if it is. Are there plenty of restaurants and large supermarkets in the other resorts mention, Vera etc are they all hilly?

Sorry, I don’t know what local prices are like for winter holiday lets. RdM is not expensive, there is plenty of choice. The figures you have found do seem excessive, to say the least, for a six-week stay. When we travel we estimate about €500 max for a week stay, a six-week stay will be proportionately less but Xmas/early January is pricier. And we book one-bed SC apartments.

Spain is a noisy place at times of course  when kids rev up their motorbikes and cars in the 30 zone! The two main roads here are Avenida Mediterráneo and Avenida Rosita Ferrer: before we moved here to live we stayed in three rentals around this spot. There is plenty of street parking but some rentals come with underground parking. Mercadona is just 100m away, further away there’s Consum, Spar, Dia etc. 

And Almeria City is less than a 30 mins drive away - not to be missed - visit the 1000 year old Alcazabar and Cathedral and if keen: IKEA, which opens in July!

Google maps is best place to look. If you have an apartment on Av. las Gaviotas it’s most likely in one of these blocks - see photo:

A better and lower-rise place is:

Balcones de Roquetas, Av Rosita Ferrer, 04740 Roquetas de Mar.

RDM is nothing like Benidorm. There are some apartment blocks that are high rise but if you looked along the coastline you would just see hotels (most maybe seven floor high or so) dotted about with mainly quite low apartments in between. Certainly in the Playa Serena area. We love it because it is mainly Spanish although the a reasonable number of ex pats who are friendly and helpful.
