With regards mobile phone SIMS, I can recommend DigiMobil. They are pay-as-you go and are carried by Movistar. They offer 4G data and very competitive pricing. For example, I pay 10€ a month and have selected the package that for 10€ gets me unlimited national calls, 1000 SMS and 3GB of data. Unused data rolls over to the next month. For 10€ you can also select the Combo 10, which gives you 2.5GB data and 400 mins national and international calls. (Digi to Digi is always free / unlimited) and again unused data rolls over. See https://www.digimobil.es/ for details.
You are not locked into any particular package and can swap packages month to month as you need.
DigiMobil have the advantage of also offering a dedicated English customer service option.
With regards Internet, there is an awful lot of choice, but it will be dependent on exactly where you are - i.e. is Fibre available? or can you get a good 4G signal?
I currently use http://www.4ginternet.es, which is operated by Steve Bancroft, a native English speaker. For 59,95€ I get 200GB of data at 4G speed. 4ginternet also offers an “IPTV” package as well. The advantage is of course that there is no installation of points, boxes or aerials required. The disadvantage is that it is “only” 200GB and costs 60€. This, though is about par for 4G data.
When Fibre eventually makes its way to Valle del Este, I shall likely swap to that and get the same or better download speeds with unlimited data for half the price. 4G has many advantages but because of the infrastructure needed to support it, will always be more expensive.
You will also get a variety of WiMAX (Worldwide Interoperability for Microwave Access) solutions from a couple of companies. Generally these solutions are quite competitive on pricing, BUT, being Microwave, they require a satellite dish or aerial to be fixed at the property and your linespeed can suffer in inclement weather - or indeed in any atmospheric condition that would affect satellite communications.
Hope this helps
