No, you will not be able to keep working. The Digital nomad visa which would permit that is still not available and there is as yet no timescale as to when it will be.
That means coming over on a Non Lucrative Visa, and as you may guess from the name, this means no remunerated employment of any kind whatsoever. The job you have at the moment would certainly not qualify you for a work permit.
Once you have committed to migrating here (for that is what it is - migration), as long as you have all your paperwork in order and meet the financial requirements, the process appears to be quite straightforward and not a long, drawn out affair

Thank you. I wasn't depending on working so will have to give up. Not an issue. I can give up work. My partner however, will need a job, will he be able to get 1 easily over there, preferably delivery work?

Unless he can get a work permit, or holds an Irish / other EU country passport, no.
If he holds an Irish / other EU Country passport, you can safely ignore the information that follows on Work Permits, because as an EU citizen it wouldn’t apply to him. He would have the right of freedom of movement.
If he is on a UK passport, the only way he can work is if he obtains a work permit. This entails having a skill that is on Spains occupation shortage list, then finding a company in Spain that is prepared to say they cannot find his skills anywhere else in the EU and are prepared to offer him a contract and apply for his work permit (as it is the employer who must apply)
The second method is to apply for a work permit as self-employed, BUT … he will need a solid business plan, and pre-sales invoices / letters of intent from customers here in Spain.
Delivery work is not on skills shortage list unfortunately, and unless he speaks and understands reasonable Spanish, he’ll find delivery work very difficult to break into in any event.
