How long does it take to buy a car from a dealer and you are paying cash , is it a case you can drive it away the same day or are you looking at a few days

For one thing cash payments for goods or services of more than 1.000€ are illegal in Spain. I very much doubt the dealer (if reputable) would accept a cash payment, lest the AEAT descend upon them and levy a massive fine on both the recipient and the purchaser.
And no, you won't be able to drive away the same say. Car will need to be checked / serviced and change of owner effected with DGT. You'll be in for a wait of about a week.

You will find car buying a very different process to doing the same in the UK. You likely won't be able to get much in the way of a deal. Cash transactions are a no no as explained in the previous post.
Finance is heavily 'pushed' ( as you would expect)
If I bring my own car over to Spain on a non lucrative visa , I have read that after 30 days I cannot drive it unless it has gone for the ITV test or change over, I know it’s some sort of road worthy test like our MOT here in the UK , what I’m asking is does this test then has to be done every year from this ITV test date or from the date the UK mot runs out

Once you have had the technical inspection and ITV and are on Spanish plates, then you will be obliged to ITV every year from date of last ITV.
The ITV test is very very strict here - I think a little stricter than UK. To pass ITV, the car may not differ from manufacturers specs in any way whatsoever, right down to the colour of the vehicle specified by manufacturer. You will need to obtain a Ficha Tecnica for your vehicle which is the manufacturers specs for your particular vehicle, when it was first registered etcetera, and your car may not diverge from the Ficha Tecnica in any respect - so you don't see any modified cars here - no spoiler / body kit add-ons, lowered suspension, larger wheels etc.
(Also worth remembering, unlike UK, there is no leeway at all given for driving a vehicle without an ITV. I believe in UK, if you are out of MOT but booked in to be inspected, the car can be driven. Here not. Once ITV has expired, even if you have a booking, car may only be transported to ITV station on a flatbed tow truck.)

I bought a new car two years ago and it took 3 months to arrive. I offered to pay cash ( bank transfer) and was told it would be 5% more. I borrowed €5000 and got a lower price, a years free insurance, free 2nd year service and an extended warranty for 5 years.

No it was the Syrsa garage in Vera for a new Duster
