deregistration from UK

Hi can anyone tell me what paperwork I need for deregistration from UK for my move to Spain, it all seems very vague

depends on your age and if you hold a UK passport and pay tax on UK.

You don’t need to inform the UK that you are leaving.  It is now much harder to get here as regards brexit.  You need a visa to come here now and that starts in the uk.   The only info to the un is tax equalisation.  You also need an s1 form if you are a pensioner in the uk.  If not a pensioner you will need private medical insurance.   I suggest u take serious advice from a lawyer. You may be able to piggyback on your wife’s application as she is European.

He certainly can.  As Czech Republic is in the EU, his partner can apply for Residencia and he can apply as family member of an EU Citizen.  No need for visas etc

You can certainly piggyback off an EU partners passport.  Be prepared for a long wait, my wife has been waiting since February as there is a huge backlog.
