We have just driven out to my dads invisibly against the advice of the FCO and we have travel insurance through Battleface. They will insure you but it will obviously be more expensive than normal. Martin Lewis recommended them on his website as they insure to areas that are advises against. Hope this helps

Health insurance still covered by EHIC during transition, we can survive on this and car insurance.

Yes, although please remember EHIC is not health insurance as such but is for emergencies only

The ehic covers all medical requirements, not just emergencies. It gives the same availability as a Spanish national, and is recharged to the uk

Well, sort of I guess. Not quite the same as a Spanish National - from the NHS website:
“The EHIC covers medically necessary state-provided healthcare at a reduced cost or, in many cases, free of charge, until your planned return home.
This includes treatment of a chronic or pre-existing medical condition that becomes necessary during your visit.
An EHIC is not a replacement for travel insurance. Make sure you have both before you travel.“
I defer to you - I think it was that last paragraph that made me believe it was emergency use.
