We’re moving to Spain at the end of this year and we have a 25 year old Mercedes that we want to bring with us. We plan to drive it down. Does anyone one know if we have to pay import tax and what we have to do to be able to drive it in Spain, Spanish plates etc.

They are in the process of matriculating my car onto Spanish plates.

Also Jamie at Costa coches on Antas industrial estate, will tell you everything you need to do. And do it for you. No problem with language either. He is bilingual

As always Dario gives sound advice, even though we don't always agree, lol. Just as a guide line, I've been quoted 1233 euro for everything involved in the transfer ITV, matriculation, plates and dealing with all the many rules you need to follow to make it happen. I have an additional charge to have my headlights/tail lights modified to suit driving on the other side of the road. You could negate this by sourcing second hand lhd drive headlight, but I decided agains't this route myself. You may face import tax as well. Car registration Spain can help you with that to reduce it.
Try to get your residency in place before you "import", replate your car. You may be liable for lower import duties ( none pre-brexit!).
